Beef Pho - Pho

Pho is a traditional dish of Vietnam, and is considered one of the typical dishes for Vietnamese cuisine. The main ingredients of pho are pho noodles and broth along with thinly sliced beef or chicken.

December 12, 2021, a special Doodle about pho appeared on the Google homepage. Pho - one of the iconic dishes of Vietnam's culinary culture was promoted on the Google Search homepage of 20 countries and territories.


ORIGIN OF VIETNAMESE PHO

Although most historians agree that Pho was invented in the late 19th and early 20th centuries in Northern Vietnam during the French colonial period, its origin remains a mystery. Some people believe Pho was originated from the French one-pot beef and vegetable stew pot-au-feu, while others say it was from the Chinese communities in the north of Vietnam.

Today, Pho has followed Vietnamese people all over the world and has become a "brand" dish of Vietnam. Although the origin of the dish is controversial, the anecdotes about Pho are still worth checking out. In addition, Pho can also be considered as one of the typical examples of the concept of Bricolage (hybrid) that researchers of culinary culture use to refer to dishes that tend to be hybrid (combining, modifying from many foreign food sources).


VIETNAMESE PHO RECIPE

Ingredients:

- Beef tenderloin

- Beef bones

- Onion

- Scallion

- Coriander

- Herbs

- Noodles

- Spices (salt, sugar, pepper, cardamom, ginger, anise, cinnamon...)

Step 1: Prepare ingredients

- Wash bones and beef.

- Cut the beef into thin pieces.

- Blanch beef bones for about 3-5 minutes to remove dirt and odors.

- Take out the bones and bring them to wash many times with clean water.

- Roast anise, cinnamon, and cardamom on low heat until fragrant, then put it in a cloth bag tightly tied.

- Wash the green onions and cilantro and cut them into small pieces.


Step 2: Make broth

- Stew bones and seasoning bags for 4 hours. The longer the stew, the more delicious and rich the broth will be.

- After 4 hours, take out the seasoning bags, add cold water, add seasoning and continue to boil the broth on low heat.

Step 3: Prepare noodles and decorate

- Noodles are lightly cooked with boiling water, then put in a bowl, place beef on the surface, sprinkle with scallions, coriander, chopped onions, and broth.

- Squeeze a little more lemon, and add a little chili.
