Crispy Vietnamese Pancake - Banh Xeo

Banh Xeo is a type of pancake made from a basic mixture of rice flour, turmeric and coconut milk along with other ingredients.

Banh Xeo is one of the typical dishes in the South of Vietnam. This is a kind of cake that is both cheap and delicious, popular with ordinary people. Now, it has become a familiar dish for city people and has received the love of foreign tourists.

Because when pouring the dough into the hot pan, the sound of “xeo… xeo” is heard, so this dish is named Banh Xeo.

Banh Xeo Recipe


Ingredients


Include everything your reader needs to make this recipe perfectly, with measurements, optional additions, or alternatives. For example:

  • 500g rice flour

  • 1 tbsp turmeric powder

  • 50ml coconut milk

  • 300g shrimp

  • 300g pork belly

  • 300g straw mushrooms

  • 2 onions

  • 1 carrot

  • 1 white radish

  • Lettuce, broccoli, herbs, bean sprouts, scallion

  • Seasoning, monosodium glutamate, salt, fish sauce, vinegar

Step 1: Prepare ingredients


Wash pork belly and cut into thin pieces.


Peel the shrimp, cut off the hard antennae, remove the intestines and wash.


Put shrimp and pork belly in a clean bowl, marinate with ½ teaspoon seasoning, 1 teaspoon pepper, mix well to absorb the seasoning and marinate for about 15 minutes.


Peel the onion, wash it and cut it thinly.


Remove the root of scallion, wash, and cut it into small pieces.


Peel carrot and white radish, wash, and grate.


Wash herbs and bean sprouts, soak them in salt water for 15-20 minutes, then take them out to dry.


Step 2: Make pancake


Put the pan on the stove and add cooking oil, when the oil is hot, add the pork belly and fry it over low heat. When the pork is cooked, take it out, continue to add the shrimp, fry for about 5 minutes until the shrimp is fragrant and take it out


Pour 500 grams of rice flour and one teaspoon of turmeric powder into a bowl. Mix the powder with about 250ml of water and 50ml of coconut milk. Then add to the mixture 100ml of beer. Stir the flour mixture well and let the dough rest for about 20-30 minutes for the dough to fully rise.


Put 1 tablespoon of cooking oil in a non-stick pan, wait for the oil to boil. Pour in some flour, tilt the pan to coat. Add shrimp, pork, onion and a few sprouts, cover for about 30 seconds until the dough is cooked. Fry until crispy, fold in half and fry the rest until crispy on both sides.

Step 3: Make dipping sauce and other ingredients


Dipping sauce is mixed according to the following ratio: dissolve 3 tablespoons of sugar with ½ cup of fish sauce, ½ cup of warm water, 1 tablespoon of lemon juice. Add minced garlic and chili.


Put the grated white radish and carrot in a bowl, marinate with 2 tablespoons of sugar, 5 tablespoons of vinegar, 200ml of filtered water, mix well and let stand for about 10 minutes for the radish and carrot to soften.

Step 4: Decorate and enjoy


Put the pancake to a plate, serve with salad, herbs, marinated white radish and carrot, and enjoy with dipping sauce.
