Each strand of white vermicelli sits neatly in a bowl of sweet and sour dipping sauce and fragrant meatballs, bringing an unforgettable taste.

Today, many people around the world know about Bun Cha - a traditional Vietnamese dish that appears on the culinary rankings of prestigious newspapers, magazines, and travel websites in the world. In particular, the event that former President Obama ate Bun Cha in Hanoi with the famous American chef and TV presenter - Anthony Bourdain contributed to making the name of Bun Cha more widely known. This is one of the dishes with unique flavor of Vietnamese cuisine.

Kebab rice noodles Recipe
Ingredients
1kg fresh vermicelli
700gr pork belly
500gr minced pork
½ papaya
1 carrot
1 tbsp minced shallot
1.5 tbsp minced garlic
2 tablespoons oyster sauce
3 tbsp honey
2 tablespoons colored water
Minced chili
500gr vegetables (lettuce/perilla/basil)
Common seasoning (salt/pepper/seasoning/monosodium glutamate)
Cooking oil
1 cup sugar
½ cup vinegar
1 cup fish sauce
Step 1: Prepare and marinate pork
For pork belly, scrub with salt to remove dirt and odors, then clean with cold water and dry. Use a knife to cut the meat into thin slices.
Marinate the meat with ½ tbsp minced shallot, ½ tbsp minced garlic, ½ tbsp seasoning, ½ tbsp monosodium glutamate, ½ tbsp ground pepper, 2 tbsp fish sauce, 1 tbsp oyster sauce, 2 tbsp honey, 1 tbsp colored water, then mix well and marinate at least 30 minutes.
For the minced pork, add ½ tablespoon minced shallot and ½ tablespoon minced garlic, ½ tablespoon seasoning, ½ tablespoon monosodium glutamate, ½ tablespoon ground pepper, 1.5 tbsp fish sauce, 1 tbsp oyster sauce, 1 tbsp honey, 1 tbsp colored water. Mix well with hands and marinate the meat for about 30 minutes to infuse the flavors.
After about 30 minutes, use hands to take a sufficient amount of minced pork and then roll it into balls.

Step 2: Prepare other ingredients
Peel carrot, papaya, soak with salt water for about 5-10 minutes, then wash with clean water.
Cut carrot and papaya into thin slices, add 1/3 tablespoon of salt to a bowl and mix well, marinate for about 15 minutes, then wash carrots and papaya with water.
Add 1.5 tbsp sugar, 1/4 tbsp salt, 1 tbsp vinegar, ½ tbsp minced garlic, mix well and marinate for another 15 minutes.

Step 3: Cooking pork
Use a brush to spread a thin layer of cooking oil on the electric grill, arrange pork belly and meatballs on top. Grill the meat until golden brown on both sides, then fold into a bowl.

Step 4: Make dipping sauce
Put the pot on the stove, add 1 cup of fish sauce (about 200ml), 1 cup of sugar (about 200gr), 1/2 cup of vinegar (about 100ml) and 2 cups of clean water, and cook on high heat for a few minutes. When the seasoning is completely dissolved and the fish sauce starts to boil, turn off the heat, and taste the seasoning to suit.
Step 5: Decoration
Take 1 bowl of dipping sauce, put grilled meat, meatballs, marinated carrot and papaya into the sauce bowl.
Pick up vermicelli and dip it in a bowl of dipping sauce, add raw vegetables and enjoy with grilled meat and meatballs.
